
This potato soup recipe is a easy and delicious recipe made in the slow cooker. It’s creamy, delicious and loaded with bacon, cheese and potatoes.

Slow Cooker Potato Soup Recipe
Ingredients
- 5 pieces bacon sliced and cooked
- 5-6 potatoes russet, golden yukon or red potatoes
- 3 1/2 c chicken or vegetable stock
- 1 onion diced
- 4 tbsp butter
- 1/3 c all purpose flour
- 12 oz. evaporated milk
- 1/2 c sour cream
- 1/2 c cheddar cheese
- salt and pepper to taste
Method
- In the slow cooker: add the cooked bacon, diced potatoes, onion, salt and pepper. Next, pour in the vegetable or chicken stock. You will want to ensure that the potatoes are just covered.
- Slow cook on low for 6-8 hours or high for 3-4 hours. You simply want the potatoes to be tender.
- Once the potato soup has cooked, place the butter in a saucepan and allow to melt.
- Whisk in the flour to create the roux. Allow to cook the flour off for about a minute.
- While using the whisk slowly pour in the milk until so that you have a smooth consistency. Allow to simmer as the roux will thicken quite a bit.
- Pour the roux into the slow cooker and stir until fully combined.
- Next, add in the grated cheese and sour cream.

Notes
- evaporated milk – you can substitute for milk or even heavy whipping cream.
- sour cream – you can also use greek yogurt in place of the sour cream.
